Noodles with Peanut Sauce and Veggies

Recipe from Moosewood Cooks at Home (from Mamma!):
Udon Noodles and Vegetables

ingredients
sauce:
8 oz (i did the whole package of course) udon noodles or linguine (I did whole wheat spaghetti)
1/4 c peanut butter
1/3 c cider vinegar
1/4 c soy sauce
1/3 c warm water
1/3 c dark sesame oil (this stuff is strong, i think this was too much)
2 garlic cloves, minced
small chile minsed (we used a few drops of hot chile oil)
1/4 c chopped basil (we didnt have this - i'm sure it would have been great)

on top:
scallions, chopped
cucumber, peeled and diced
tofu, cubed

fresh lettuce greens or spinach
grated carrot

directions:
make the sauce

cook the noodles

prepare vegetables

pile noodles in middle of plate, surrounded by greens and vegetables, topped with peanut sauce

we also served trader joe's potstickers (the vegie ones - which were not very good) with the dinner
