Wheat Berry Pancakes

I got this recipe from Natural Health magazine, which I picked up at the airport on my way home from Seattle. The pancakes were pretty good, though I would add some additional flavor to them next time - maybe some dill or red onions or something like that. I also served them with mixed greens and dressing, as they suggested, which was really good!

Here's the recipe:

ingredients:
1 cup whole wheat flour
1 tsp salt
1/2 tsp baking soda
1/4 tsp cream of tartar (I left this out because I don't have it)
1 cup skim milk
2 eggs
2 tblsp olive oil
2 cups cooked wheat berries (you have to soak these the night before and then cook them for 30 minutes or so in enough water to cover them before you can use them in this recipe)
2 tblsp chopped parsley
3 scallions, chopped

directions:
- mix flour, salt, baking soda, and cream of tartar in large bowl
- in a separate bowl, mix milk, eggs, oil, and wheat berries. beat lightly. pour wet ingredients into dry ingredients. add parsley and scallions. mix until ingredients are combined
- heat skillet over medium heat and add oil (i used sunflower oil because it doesn't burn at as low a temperature as olive oil and i always end up burning the olive oil when i have to fry things in a skillet)
- pour batter 1/4 cup at a time into skillet. cook until brown on bottom, flip and repeat.
- serve with mixed greens
