Mary's French Green Lentil Walnut Salad

Ingredients:
2 cups french green lentils
1.5 cups chopped walnuts
3/4 cup sliced green onions
1/4 cup balsamic vinager
S&P
1 cup olive oil

Instructions:
1. Boil lentils up in about 8 cups of water until soft, but not mushy - about 20-30 minutes.
2. Strain and cool lentils
3. Add 1.5 cups chopped walnuts and 3/4 cup scallions
4. In a small bowl, mix balsamic with salt and pepper
5. Slowly whisk in olive oil to balsamic vinaigrette
6. Pour dressing over lentil mixture - mix thoroughly

This lasts several days in the fridge
