Bean and Squash Burgers

Ingredients:
1 acorn squash
1 tablespoon olive oil
1/2 cup diced onion
1 tsp salt
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp oregano
2 cups cooked or canned black beans
1 tsp red wine vinegar
1 tablespoon canola oil
buns
lettuce
other condiments


  1. cut squash in half and remove seeds. steam until soft.
  2. heat olive oil in sauce pan. add onion, salt, chili, cumin, oregano. cook on medium low heat for about 5 minutes or until onion is translucent.
  3. scoop squash pulp into medium bowl. stir in the onion mixture, black beans, and vinegar. mix well.
  4. shape into six patties. heat canola oil in skillet and brown on both sides. serve on buns with lettuce and condiments.
