Best Stuffed Mushrooms! Mushrooms Stuffed with Walnuts and Cheese from the Silver Palate Cookbook


We made these for the Valentine's Party and they were really good. I would definitely make them again. They are from the Silver Palate Cookbook.

ingredients:
12 medium mushroom caps
1 tblsp olive oil
1 tblsp unsalted butter
1/2 cup finely chopped yellow onion
2 tbslp coarsely chopped walnuts
1 garlic clove, minced
5 frozen chopped spinach, defrosted and squeezed dry
1 oz feta cheese
1 oz gruyere cheese
2 tblsp minced fresh dill
salt and pepper to taste

directions:
- remove mushrooms stems and save for another time
- heat olive oil and butter in a skillet. add onions and cook until light brown - about 25 minutes
- preheat oven to 400 degrees F
- add walnuts and garlic to onion and cook for another minute. add spinach and cook another 5 minutes, stirring constantly. remove from heat and cool slightly. add cheeses, dill, salt and pepper
- arrange mushrooms in baking dish. divide filling mixture evenly between them
- bake until filling is browned and mushrooms are thoroughly heated, about 10 minutes
- serve immediately
