Red Beet Latkes from "The Swedish Table"


Traditionally prepared like veggie burgers with boiled potatoes and a side dish of veggies, Helene prefers to serve hers as an appetizer garnished with a heaping tsp of creme fraiche.

Ground beef mixed with shredded cooked beets and raw onion and formed into hamburger patties is a Swedish favorite (as Helene Henderson explains), and is called biff a la Lindstrom.

ingredients:
1 medium beet, boiled or roasted, peeled and grated
1 medium potato (russet), boiled, peeled, and grated (1 cup each grated beet and potato)
1/2 small onion (1/4 c) peeled and grated
1 tblsp dry bread crumbs
1/2 egg lightly beaten
1 tsp lemon juice
1 tbslp parsley chopped
s&p
2 tblsp and 1 tblsp olive oil
1/2 c sour cream or creme fraiche
1 tbsp fresh minced chives

instructions:
- combine beets, potatoes, onion, bread crumbs, egg, lemon juice, and parsley
- season with s&p
- fry in skillet with olive oil and butter about 2-3 minutes per side until golden brown
- garnish with sour cream and chives
