Spinach and Feta Filling

- 10 oz frozen chopped spinach
- 1/2 finely chopped onion
- 3 tblsp olive oil
- grated nutmeg
- salt and pepper
- 1/2 cup finely chopped fresh dill or mint
- 1/3 cup ricotta cheese
- 1/4 cup feta cheese
instructions:
- defrost frozen spinach. drain and squeeze out as much water as possible.
- saute onion in the olive oil over low heat until tender and golden, about 20 minutes. add spinach and cook, stirring constantly, until dry - 10-15 minutes. season with nutmeg, salt, and pepper, and transfer to bowl. cool to room temperature.
- stir in dill, ricotta, and feta. taste and correct seasonings.
Enough filling for approximately 60 trianges.

Jo made these for Christmas 2010. Outstanding, as expected, but they don't save well uncooked. They get all stuck together and soggy.
